Roasted Beet and Goat Cheese Sandwich

Beets have never been my favorite vegetable. However, I have to say this sandwich was a hit. I loved it and so did my kids. It is very simple and you will not be disappointed.
The original inspiration came from this recipe I found online. I could not really follow it exactly so I made modifications based on the ingredients I had at my disposal. We are in the midst of Covid-19, so a quick trip to the store did not feel like an option.

I began by peeling and slicing the beets into discs. This is what they looked like before they went into the oven.
Then, I tossed them in olive oil, sprinkled with salt, and roasted them at 400 for about 20-30 minutes or until slightly browned on the edges and tender.
Lucky for me I had some amazing Noble bread. Noble Bakery is a local artisan bakery in Arizona that uses old world recipes and techniques. If you have not tried their bread, I highly recommend it. For this recipe I used their Country loaf. Any bread that you enjoy will work.
I sliced the bread and applied a generous layer of plain goat cheese on both pieces. I added a single layer of beets and sprinkled them with some freshly sliced chives and micro greens from my garden. I brushed the outside of the bread with olive oil and put it in my Panini maker. You could easily just use a griddle or pan as you would to make a grilled cheese sandwich as well.
It sounds overly simple, but it was delicious. I served the sandwiches with a side of Annie’s Shells and White Cheddar Macaroni and Cheese and a small salad.
This recipe took minutes to assemble once the beets were roasted. Please try it even if you are not a fan of beets (like me). It was delicious.
